The history of salted caramel begins in France where, in the late 1970s, French chocolatier Henri Le Roux came up with the idea of adding sea salt when cooking his caramel. It became popular in the 1990s when French chef Pierre Hermé invented his salted caramel macaron. Since then the confection has taken hold in everything from desserts to candies to beverages.
