One of the most common misconceptions in coffee: that "espresso" is a specific type of bean or roast. It isn't. Espresso is a brewing method — hot water forced through finely ground coffee under high pressure in about 25–30 seconds. In theory, you can pull an espresso shot from any coffee. In practice, some coffees are far better suited to it than others.
Espresso is an intense, concentrated brewing method that amplifies everything — sweetness, acidity, bitterness, and body. The best espresso coffees tend to share a few characteristics:
Medium to medium-dark roasts are the traditional choice for espresso. They offer enough body and sweetness to shine under pressure without the harsh bitterness of very dark roasts.
