COMSA stands for Café Orgánico Marcala S.A. — a cooperative of smallholder coffee farmers founded in 2001 in the Marcala region of Honduras's La Paz department. The cooperative was formed with a clear mission: to improve the livelihoods of its member farmers by producing the highest-quality organic, certified coffee and accessing premium markets that reward quality.
Today COMSA has grown to include hundreds of member families, all farming small plots at high altitude using organic methods. The cooperative provides training, technical assistance, and shared processing infrastructure — resources that individual smallholders couldn't access alone.

Our Honduras COMSA is processed using the honey method — one of the most labor-intensive and flavor-impactful processing approaches in specialty coffee. After harvesting, the outer skin of the coffee cherry is removed, but the sticky mucilage (the "honey") is left on the bean during the drying process.
This mucilage ferments slowly as the bean dries, imparting natural fruit sugars and complexity that washed coffees simply can't achieve. The result is a coffee that sits beautifully between the clean clarity of washed processing and the intense fruitiness of natural processing — offering the best of both worlds.
